This make ahead meal stores well and is on hand for those mornings when you need breakfast in a rush.
- 2 cups old fashioned oats
- 1 cup organic brown rice cereal (optional, gives a nice crispy texture)
- 3/4 cup sunflower seeds
- 3/4 cup pumpkin seeds
- 3/4 cup of honey or maple syrup
- 1/4 cup coconut sugar
- 1/3 cup oat flour mixed with 1 egg white (helps the granola clump together) 1/3 cup coconut oil or butter 3/4 cup pecans 4 soft dates 1 1/2 teaspoon vanilla extract 1 1/2 teaspoon ground cinnamon 1 teaspoon pink salt
Heat the honey and coconut sugar in a pot on medium heat and add the dates. Mash the dates with the honey and sugar until they are well incorporated and the coconut sugar is dissolved.
Mix all the ingredients except the seeds and nuts, together and bake at 325 for 30-40 minutes mixing every 10 min or so to keep the bottom and the outside from burning. With ten minuets left to cook add the nuts and the seeds mixing well. Let cook on the baking sheet.
Serve with yogurt or chia pudding and berries
